Vegetarian Thanksgiving

Thanksgiving is still 3 weeks away but I am super excited already! This will be my 3rd Thanksgiving as a vegetarian and I finally feel like I am getting the hang of it. The first year I think I ate mashed potatoes and cranberry sauce and felt like I was missing out. But last year I stepped it up a little and made a curry and a vegetable gratin both of which were really good! This year I am planning on making a bunch of different things so we have tons of leftovers- which is the best part of Thanksgiving!

This is my tentative list of things I would like to make this year…

Channa Masala

Quorn Turk’y Roast

Quinoa Pilaf

1 cup quinoa
1 tablespoon extra virgin olive oil
1/4 cup fresh peas
2 cups vegetable broth
Sea salt, to taste
Ground pepper, to taste
1/3 cup finely diced carrots
1/4 cup chopped red onions

Rinse quinoa and drain it well. In a large skillet, heat oil over medium heat. Add peas, carrots, and red onion and cook, stirring frequently, for 1 minute. Stir in quinoa and stir 2 to 3 minutes or until the skillet gets dry.

In a separate pan, heat vegetable broth to a simmer. Add hot broth, salt and pepper to the skillet. Reduce to a simmer, cover, and cook 20 to 25 minutes or until quinoa is tender.

Skillet Macaroni and Broccoli and Mushrooms and Cheese (Adapted from “Real Food Has Curves”)

4 ounces grated Cheddar
2 ounces finely grated Parmigiano-Reggiano
1 tablespoon unsalted butter
1 small yellow onion, chopped
6 ounces cremini or white button mushrooms, sliced
3 tablespoons unbleached all-purpose flour
3 cups low-fat or fat-free milk
1 tablespoon Dijon mustard
1 tablespoon minced tarragon leaves or 2 teaspoons dried tarragon
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
8 ounces dried whole-wheat pasta shells (not the large ones for stuffing), cooked and drained according to the package instructions
4 cups small broccoli florets, cooked in boiling water for 1 minute (broccoli can be added to the pasta during the last minute of cooking, then drained with the pasta in a colander)

1. Mix the Cheddar and Parmigiano-Reggiano in a medium bowl. Set aside.

2. Melt the butter in a large, high-sided, oven-safe skillet. Add the onion and cook, stirring often, until softened, about 3 minutes.

3. Add the mushrooms and cook until they release their liquid and it comes to a simmer, and then reduces by about two-thirds, about 5 minutes.

4. Sprinkle the flour over the vegetables in the skillet. Stir well to coat.

5. Whisk in the milk in a steady, thin stream until creamy. Then whisk in the mustard, tarragon, salt and pepper. Continue whisking until the mixture starts to bubble and the liquid thickens, about 3 minutes.

6. Remove the skillet from the heat. Stir in three-quarters of the mixed cheeses until smooth. Then stir in the cooked pasta and broccoli.

7. Preheat the broiler after setting the rack 4 to 6 inches from the heat source. Meanwhile, sprinkle the remaining cheese over the ingredients in the skillet. Set the skillet on the rack and broil until light browned and bubbling, about 5 minutes. (If your skillet has a plastic or wooden handle, make sure it sticks outside the oven, out from under the broiler, so the handle doesn’t melt.) Cool for 5 to 10 minutes before dishing up.

Yield: Makes six side-dish servings.

I’m finally back after a long blogging hiatus! It wasn’t an intentional hiatus, I just got too busy with other things to sit down and blog. What have I been up to you ask? Well, lets see…

We’ve been doing tons of laying around under heaps of blankets with these guys. We keep our furnace around 63 to save energy/lower our bill so we always have tons of blankets in circulation to cuddle under.

Barry has been getting regular baths to try and get the smell of the humane society off of him. We’ve definitely made some progress so far but he is still a little smelly. But smelly or not we love him!

And we love this guy too! I may be biased but I’m pretty sure he is the most adorable dog ever.

I’ve also been consumed by school work. Mid-terms came and went and I did pretty well on everything. This week alone I have a 5 page paper due and a lesson plan. Then next week I have another paper and a project due. I’m sure it is going to be like this until the semester is over which is only about 5 weeks away! I can’t believe it is going by so fast!

A Week of Dinners Tuesday – Friday

So I got a little behind on a week of dinners this week. Sometimes life happens. I will make up for it with the easiest most amazing recipe ever!

Tuesday we had pierogies- the most yinzer food ever!

Wednesday we ended up not cooking. I ate some mac and cheese at my parents before class and Jason fended for himself.

Thursday I made vegetable curry in the crock pot and it came out SO good!

Tonight we forgot about the menu plan and ate frozen pizza. It tasted way better than the leftovers look!

This wasn’t a stellar week as far as following the menu but it happens!

Now for the best and easiest recipe ever!

Roasted green beans

For this recipe you will need-

A bag of frozen green beans, olive oil, garlic powder (yes that is the largest container of garlic powder ever!), salt, and pepper.

First pre-heat the oven to 425 degrees.

Next put the beans in a casserole dish and drizzle with olive oil and then add salt pepper and garlic powder to taste. I like tons of garlic so I add a generous sprinkling! Mix up all of the ingredients until all of the beans are well coated with oil.

Bake the beans at 425 for about 40 minutes of until the ends get brown and crispy. The taste almost like french fries when they are done and they are one of my most favorite foods!

I served them with the pierogies this week and i think I ate 3/4 of the pan myself. They are amazing!

A Week of Dinners- Monday

In conjunction with my $50 grocery budget post I wanted to post pictures of what we will eat each night. Last night was supposed to be sweet and sour shrimp. When I looked up the sauce recipe I realized that I didn’t have pineapple so I just made a soy/honey/ginger sauce instead. My plan was to also have rice with the shrimp. But when I put the rice in the rice cooker I didn’t realize that it was on timer setting and never actually turned on. So instead of waiting 20 minutes for the rice to cook I made couscous in 5 minutes. Nothing went according to plan but everything came out really good!

$50 grocery budget

Jason and I are pretty thrifty people. We buy just about everything we need second hand or at thrift stores and we have reduced our eating out to about once a month. We don’t take expensive vacations and instead we take short road trips or go to my cabin. But one thing that we weren’t always thrifty about was groceries. When we first moved in together we wouldn’t think anything of going to Wal-mart and spending $150 a week on groceries and other random stuff that we thought we needed. One day we went to Adli‘s and realized that their groceries were so much cheaper. Instead of $150 we were spending $50. At first it took some getting used to. We would go to Aldi’s first and then to Wal-mart for some things that we thought we needed but Aldi’s didn’t have. But eventually we just took on the attitude that if Aldi’s doesn’t have it, we don’t need it.

Even though we used to spend about $150 a week on groceries it still pains/confuses em to hear about people doing that now. I guess its because we’ve been only spending $50 for so long. Some people ask us what we eat or joke that we only eat beans and rice and vegetables (since we don’t eat meat). But in reality we eat awesome meals and there’s never a night where I feel like, gee I wish we weren’t having _____ for dinner but since it’s cheap I’ll eat it.

To illustrate my point that you can spend very little money and eat delish food I documented my grocery shopping process.

  • First, I make a list of what we can have for dinner. I only come up with five dinners because we always have leftovers or a pantry meal I can make on the weekends. I don’t plan breakfasts of lunches because we always have bread for toast or cereal in the pantry and we eat leftover dinner for lunch.
  • Planning a meal around what you have in your fridge/pantry saves a ton of money and uses up what you have before it goes bad.
  • imageFor instance, this week I have a bag of  shrimp in the freezer so that is the main component of one meal already. I also have a ton of frozen vegetables in my freezer and one of my favorite ways to use them up is so throw them in the crock pot and make a curry sauce to go with them.
  • imageAfter I make my list I head to Aldi’s. Some Aldi’s have different layouts and some are bigger than others but the main things that I have notice about all Aldi’s is they are all clean, well organized, and well stocked. That is more than I can say for most other grocery stores.
  • imageContrary to popular belief Aldi’s carries that same items week to week unlike close out grocery store which only sells close out items in limited quantities. I have been buying the same fit and active brand string cheese for about 100 weeks in a row (Jason loves them!).image
  • My usual total is somewhere between $30 and $50 depending on what we want for dinner and what we already have on hand to use. I was really happy that the total was only $36 this week! My grocery budget includes paper products and cleaning products as well as food.
  • imageHere is all of my food when I got home! I usually don’t by this much snack/processed food but we have been in the snack mood lately so I picked up some tortilla chips and toasted ravioli’s.
  • I didn’t need bread, Milk, or Eggs this week. Jason and I go through about a half gallon of milk every 2 weeks, a loaf of bread every week or two and we only buy free range egg (usually from local farmers) about once a month. If you had to buy these things every week the total might come closer to $50 every time.

Tour de Kitchen

I missed Show Us Your Life on Friday because we were out of town so I am posting it today. I really like our kitchen because it is nice and big but it has very little counter space which sometimes isn’t so great. But I added a bunch of cabinets and storage pieces which help a ton.


Jason and I bought this hutch at a thrift store for $30 and repainted it white. It holds SO much stuff and I love decorating it with cute seasonal stuff.

This cupboard came from my grandma. It was originally blue but I painted it white and I love it.

Its hard to tell in this picture but we have a wine fridge next to the big fridge. I bought it for Jason for Christmas a few years ago and we use it all the time. Its usually half full but we love buying new bottles to put in it.

Our Microwave stand also came from my grandma. The container beside it came from Lowes and the laundry basket came from Goodwill. Our bathroom is right off of our kitchen and it isn’t big enough to hold a basket or much else (it’s TINY!)

I keep our dishes on the hutch stacked up on a cake pedestal. Its super cute and leaves a ton of room in our cabinets for other things.

Hostess Gift

Jason and I are on our way to Michigan as I type this to visit friends for the weekend. I wanted to take a cute hostess gift to my friend to say thanks for having us but couldn’t think of anything cute and inexpensive. Then I remembered a cute little gift shop that we have in our town. Its an adorable little shop called the country store and they sell candles and americana home decor type crafts. Every time I go there I want to redo my entire house in the americana theme! They have the most amazing scents for their candles and tart burners and their prices are SO reasonable!image

I bought my friend a bag of tarts in kitchen spice scent. Its cinnamony (totally just made that word up) and delicious smelling. I then found a cute litte white tart burner. I also made the Halloween cookie jar I linked up to a few days ago from Living Locurto. It was super easy to make and came out sooo cute!

All together everything cost about $10 which is so not bad for a cute hostess gift. I can’t wait to get there and give it to her (and be done with our 8 hour drive!)image

Fake It ‘Til You Make It

I’ve been wanting to make cut out sugar cookies for a few weeks now but I haven’t had a chance to bring out all of my cookie cutters, flour, sugar, kitchen aid mixer, etc, etc. Why is the concept of baking 100% more fun than the actual act of baking? So tonight I caved and stopped at Wal-mart to pick up a few things and I bought…are you ready for it?… Pilsbury ready bake cookies.

I popped them in the oven and 12-15 minutes later I had perfect sugar cookies! So far I have invested about 1% effort.

Once they were done baking I let them cool and then drizzled them with orange (prepackaged!) cookie frosting and added a few black sprinkles.

They came out super cute and I am no longer feeling bad about not slaving away in the kitchen to make cut out cookies!

Fall Projects

It seems like Fall really snuck up on me this year! One day it was September and 85 degrees and sunny and the next day it was 50 degrees and the leaves are changing! Where did the time go? I’m not complaining though because I LOVE fall! I have so many fall projects that I would like to do this year and the more I read the blogs of all the crafty and talented people on the internet the more projects I add to my ever growing list!

This adorable banner from Make and Takes is not only cute but it sounds super easy to make! I may cheat a little and use scrap book paper instead of wood and modge podge but the original tutorial is fantastic.

How cute are these candy corn bottles from Random Thoughts of a Super Mom? They can be used for different holidays using different candies!

My sewing skills aren’t all that great but this hand stitched spider from You Can Make This looks so easy to sew that I am tempted to try it! How cute would it be in a black frame with a little orange bow. I can’t wait to see how it turns out.

This Halloween cookies in a jar from Living Locurto is SO cuuuute! I am going to visit some friends in Michigan next weekend and plan on making this to take as a hostess gift!

I have so many other things that I plan on making if I have time but these are my favorites for right now! Hopefully I can post the finished products once I complete some of these adorable crafts!!

Weekly Menu

I stuck to my weekly menu pretty well last week which usually doesn’t happen. I love following my plan because it means we use everything in the fridge before it goes bad! Zero waste = a happy Dawn. This week I shopped unexpectedly and without a menu plan so I just kind of bought some random things and made a menu around them when I got home.

Breakfast:

  • Bagels
  • egg and cheese sandwich
  • granola bar
  • raisin bread

Lunch:

  • soup
  • leftovers
  • pasta
  • toasted cheese sandwich

Dinner:

  • Crock pot curried vegetables and rice
  • Taco’s
  • Crock pot vegetable lasagna
  • Mushroom stroganoff (the only thing I didn’t make from my menu last week)
  • Jambalaya
