Poached Salmon

Despite all of the wedding planning, school preparation, and general household stuff going on in our lives Jason and I still have to eat. So last night I decided to make a yummy and special dinner for us. Jason loves Salmon so I knew that I wanted to incorporate some Salmon. The menu for last night was:

Salmon poached in white wine and herbs with a mustard dill sauce, garlic roasted green beans, and fingerling potatoes with butter and parsley.

Sounds impressive right? It was SO easy and barely took any time at all to make. When I got home from getting all the components at the store I just threw the beans in a pan with garlic and olive oil, put the potatoes in a pot of water to boil, and made the sauce. The prep maybe took 15 mins (if that). Once the potatoes were done boiling I took them out of the pot and put them in a casserole dish and threw some butter in with them. Then I popped them into the oven with the beans. Now that the potatoes and beans and pretty much done you just boil some white wine and whatever herbs you like in a sauce pan. Once it comes to a rolling boil you just ad the salmon and boil for about 8 mins. once everything is done just plate it and enjoy!


I don’t eat meat and I rarely eat fish so I just had a small piece os salmon that I flaked off of Jason’s bigger piece. If you cook this for yourself and actually cut the fish properly (which I didn’t) you will have a nice solid piece of fish (unlike my flakey mess)

I just kind of made the dill sauce up as I went but here is the basic recipe:

Mustard- Dill Sauce

1/4 cup sour cream

4 Tbsp dijon mustard

1 Tbsp lemon juice

as much dill as you like- we used about 4 or 5 little stalks (3 Tbsp??)

1 tsp honey (it sounds random but it makes it taste amazing!)

Mix all ingredient together in a bowl and voila, dill sauce! If you prefer more of a saucy consistency you can add a bit of the poaching water, 1Tbsp at a time, to thin it out to your desired texture.
